Birthday Cupcake(s)
10:18 PM Edit This 0 Comments »I received lots of compliments on Duncan's birthday cupcake(s). One of our friends shared the recipe with me, and I thought I'd share it, too. It's so yummy. It's a great way to sneak in some vegetables for your little one if they are picky - Duncan LOVED them.
3 eggs
1/2 C oil
1/2 C applesauce
1 C brown sugar
1 C white sugar
1 C shredded zucchini
1 C shredded carrots
3/4 Tbs. Vanilla
1 1/2 C all purpose flour
1 1/2 C white whole wheat flour
2 Tbs. cinnamon
3/4 Tbs. fresh grated nutmeg
1 tsp. baking soda
1/4 tsp baking powder
1 tsp. salt
*could add raisins, nuts, or chocolate chips*
-Preheat oven to 325 degrees
-Grease tins or use liners
-In a large bowl, beat eggs till frothy. Add oil, applesauce and sugars and mix until blended.
-Stir in veggetables and vanilla
-In another bowl, combine flours, cinnamon, nutmeg, soda, powder, and salt, whisk to combine.
-Add dry ingredients into wet ingredients and stir just until moist, do not over mix.
-Divide into pans filling almost to the top. Bake 33 minutes or until toothpick comes out clean. -Remove from pan and cool on cooling rack.

For Duncan's birthday, I doubled this recipe, and it made one giant cupcake and 12 regular ones. The next time that I make this, I'm going to make a loaf; we discovered later that this tastes even better when it's warmed and has butter on it!
