Sustainable Mommy

I found out after a very relaxing day at work that I was not going to have to work at Loft last night. That just made the whole evening more nice because I have two days off in a row! That doesn't happen for me very often. I came home and took a short nap. Eric got home at 4:15 and we watched tv for a while, then have a creative dinner. I am doing the core plan this week, so finding stuff to eat when you really need a trip to the grocery can be challenging. Last night we had couscous with sauteed onions and salami. Tonight we had more couscous (whole wheat, of course) with some sauteed shrimp. We also had some leftover salmon that I brought home from work. Very tasty. Afterwards, we went to several places that we've been meaning to visit for quite a while. First, KMart to return a radio I bought for work a few months ago. Second, Bed, Bath, and Beyond to purchase a gift for Andy and Amanda's wedding today. Then, Target to return the cardigan I had to buy for Joanna's wedding because I forgot mine at home. Lastly, we went to the grocery and got some goods. :o) Back at home, Eric scanned pictures for the reunion next weekend, and I watched a lot of "Man vs. Wild." I love that show! We didn't go to bed until midnight.

I don't know what we're doing for the first half of the day, but tonight we are heading to Lexington for Andy and Amanda's wedding (Andy is Eric's cousin on his dad's side). Everyone and their mother is either getting married today or attending a wedding. Let's hope it's a lucky day for everyone else, too, and not just those people getting married!

I just had some oatmeal, half a of a banana, and some milk for breakfast. So yummy. :o)
