Paleo, day 8!
Last night was my "splurge night" and we treated ourselves to ice cream in celebration of Eric's raise! I also may or may not have had some kettle corn.
Monday was uneventful - music class in the morning, lunch and naps, then dinner and bedtimes. We had a yummy rump roast from the crockpot for dinner, along with some "cauli-rice" (cauliflower ground up in the processor to look like rice and then cooked in the microwave) and kale.
Today, we had our initial consultation with a chiropractor - she's a friend, too. She adjusted the kids, and then took x-rays of me. I'm meeting with her again on Thursday about oils, and our follow-up appointment is next Friday. Headed to my mom's for lunch, and once the kids were down for naps, we went to Oxmoor and I got some new shirts from Eddie Bauer. I feel like I wear the same 5 shirts over and over. Also got some wrinkle-free khakis for Eric. He needs to stay looking sharp these days! :o)
Back at home, we had a fantastic new crockpot chicken recipe for dinner! Applesauce chicken ... before I left this morning, I put 4 frozen chicken thighs in there, 1.5 cups of applesauce, onion powder, pepper, and apple cider vingear. Set the timer to 7 hours, and when I got home, the crockpot was set to "keep warm." Perfect! It was DELICIOUS! Simple! and completely Paleo! We also had sauteed zucchini, and I made some bowtie pasta for everyone else.
The Olympics start on Friday! So excited!

3 Observations or Opinions:
I don't know... if you've given birth naturally, I would consider you a birth professional. You know all the details of what happens because you were there to experience them...
It takes a lot for me to call someone a "birth professional." As in, my midwife providers and OB/GYNs are, but my cousin, who just finished midwifery school and is a CNM after years of being a doula... I still struggle to call her a "professional." But that's only because of my relationship with her. Because I'm family, she feels okay expressing opinions to me (which make me feel judged when I have different circumstances than her or her preferences)... so I only feel like the "pros" are the ones who help me birth my babies in the way needed (and as close to how I want it as possible) without judgement.
That "without judgement" is the biggest step toward "professional," in my book. That and the experience of knowing what to do in any situation :) But that can take a lifetime depending on exposure to various situations.
But given how well-versed and trained you are on things, I would definitely consider you a trusted resource when I have questions!
Wow, Dawn, your standards are high! I consider any experienced doula or childbirth educator a birth professional, in addition to OBs (though some of them are questionable, IMO!) and midwives.
