Before I forget

I looked around online during naptime today for dinner ideas. I wanted to mix pasta, sauce, vegetables, and cheese into a kind of casserole-ish dish. I didn't find anything that looked easy enough, so I kind of made up my own dish, and it turned out really well! Here's what I did:

Shred 1/2 cup of any kind of cheese (I used Colby) and dump it in a big bowl. Dump in some steamed broccoli, cauliflower, and mushrooms, along with probably about 1 tablespoon (or more) of Italian Seasoning and at least 1 teaspoon of salt. Add about 2 cups of spaghetti sauce, 2 cups of cooked whole wheat egg noodles (or your preferred pasta), and about 1/2 cup of sour cream. Sprinkle the top with parmesan cheese. Mix it all together and cook for 30 minutes at 350.

Wahoo. The best part about this dish is it is so customizable. You could add some ground beef or chicken, or any vegetables that you happen to have on hand.

I stayed home today with the little man. It's getting easier to do this since Duncan can do more things, but it's still definitely not my favorite thing to do.

We had a great family weekend! Was sad to see it end. On Friday night, I went out for "Girls Night Out" with some amazing ladies. Saturday, we stayed home until after nap and then had dinner with my mom and dad. Sunday, we visited the other set of grandparents and left Duncan with them while we had a short date - Kohl's, Red Robin, and a short visit to Diana's parents' new house in Norton Commons. Absolutely beautiful! Yesterday, we met some friends at the Science Center - Duncan had a ball. After we left the 'kids only' area, we let Duncan run around wherever he wanted to go. He took a pretty good nap!

Feeling pretty good. Slightly jealous of those friends finding out genders ... but I know it will be worth it for us to wait.

If you really want to add a good portion of veggies to a casserole with a pasta like quality spaghetti squash is fantastic!! We do that all the time and even my dad (a veggiephobic) didn't even notice! Pesto sauce is good too.
