Yesterday was an eye-opening day for me. After posting, I started reading a long article about cow's milk. Ugh. I commented on a friend's wall: "If I don't stop doing research, I'm going to stop eating everything, which is not good." A little moderation goes a long way, don't you think? At this point, I still feel highly against cow's milk, though I think that's because the findings are so fresh (no pun intended) in my mind.

After a great playgroup, I came home and Duncan went down for a nap. I talked to my brother, and when I mentioned that I intended to start baking my own sandwich bread (I love baking!), he asked me if I was going to grind my own wheat, too. This may sound silly, but it's not as unheard of as one might think - my sister-in-law's sister belongs to a food co-op in Texas, and she buys and grinds her own wheat her for bread. I started thinking about this ... not the grinding, but if such a co-op exists in Louisville. Well, friend, it does! I was so excited to find this place that I called my mom and dad and shared the news with them. I knew that Eric would not share my excitement (my excitement = money), and I was right. However, I'm still getting information and asking questions.

I had no idea how a co-op worked, but this is what I've gathered: it's like a CSA and a farmer's market combined, in that you are buying all local produce/meats/dairy, etc., but you can pick what you want, unlike a CSA. The general idea (with the one in Louisville) is that you load an account with money, as much or as little and you can/want, then you "shop" the online store, and you go pick up your order in a few days. Sounds pretty cool, right? I'm beyond excited.

The wheat bread that I baked last night turned out fabulous!

Here is an amazing website that Eric shared with me last night. I plan on doing the 28-Day Challenge at some point!

One point that stuck out in my mind from yesterday is this: those who spend a little more money on food now will benefit in the future from not having to spend a lot on healthcare. This obviously works the other way, too. Huge eye-opener for me.

Unless, of course, they get bit by a Lyme-infected tick in which case your entire budget goes to drs and drugs.

We love our co-op here!

I need to look more into a CSA/co-op thing this year, although we have a short growing season in New England. However, I thought you should know that I usually only drink soy milk and I've only been buying organic apples lately. Sometimes, even just small steps help our health, too.
